Assistant Butcher – PTAMI (Fixed‑Term)

About the role

The Assistant Butcher supports the galley team in preparing and handling meat products for passengers and crew aboard the vessel. Working under the Chief Butcher, you will ensure that all butchery output meets the company’s menu specifications, quality standards, and environmental guidelines.

Key responsibilities

• Prepare butcher department products according to established menus and recipes.
• Follow waste‑separation policies and minimise food waste.
• Maintain Guest Satisfaction Scores for meat portions, quality, and overall butchery service.
• Check quality and quantity of incoming items, store them per USPH procedures, and use them according to standard recipes.
• Apply proper food‑handling and cleaning practices in line with USPH standards.
• Operate all equipment and utensils safely; report any malfunctions to the Chief Butcher.
• Follow instructions from the Chief Butcher and perform additional duties as assigned.

Required profile

• Good listening skills and ability to follow instructions.
• Initiative in culinary tasks and willingness to ask questions when unclear.
• Team‑player attitude.
• 2+ years experience in a 5‑star hotel, cruise ship, or high‑profile restaurant.
• Experience in high‑volume operations (minimum 100 meals per service).
• Certification from an accredited advanced food‑safety program.
• Preferred: degree from an accredited culinary college or university.

Required skills

• Advanced food‑safety certification.
• Knowledge of USPH standards and procedures.
• Proficiency with kitchen machinery and knife safety.
• Familiarity with VSP (preferred).
• Fluent reading, writing, and speaking of English.
