2nd Commis Pastry – HAL – PTAMI

About the role

The 2nd Commis (Pastry) supports the galley team on the HAL vessel, preparing and handling food for guests and crew according to company menus and recipes. This fixed‑term position works in a high‑volume, 5‑star environment, ensuring quality, safety, and efficiency in pastry production.

Key responsibilities

• Assist in preparing all pastry items following company recipes.
• Maintain and return equipment and utensils properly to avoid damage.
• Report any malfunctioning equipment to the Pastry Chef.
• Follow guidelines and instructions set by the Pastry Chef.
• Maintain high standards of productivity, cleanliness, and sanitation throughout the shift.
• Handle lido prep, floating, and breakfast duties; rotate across pastry stations as needed.
• Meet daily job tasks, resource utilization, recipe compliance, and SOP standards.
• Complete required trainings and ensure proper maintenance of company property.
• Perform additional job‑related functions as assigned, including health, safety, and security responsibilities.

Required profile

• Minimum 1 year experience in a 5‑star hotel, cruise ship, or high‑profile restaurant.
• Experience in high‑volume operations serving at least 100 meals per service.
• National Certificate in Pastry and certification from an accredited food‑safety program.
• Ability to read, write, and speak English fluently.
• Marlin's Test score of 60 or higher.
• Preferred culinary degree from an accredited college or university.

• Pastry preparation according to standardized recipes.
• Operation of kitchen machinery and equipment.
• Knife safety and handling.
• Food safety and hygiene knowledge (VSP preferred).
• English language proficiency for clear communication.
