2nd Commis Pastry – Fixed Term – PTAMI

About the role

The 2nd Commis Pastry supports the Pastry Chef in delivering high‑quality pastry items for guests and crew aboard the PTAMI vessel. This fixed‑term position offers the chance to work in a fast‑paced, high‑volume galley environment while developing professional pastry skills.

Key responsibilities

• Assist in preparing all pastry items according to company recipes and standards.
• Maintain and return equipment and utensils properly to avoid damage.
• Report any malfunctioning equipment to the Pastry Chef promptly.
• Follow all guidelines and instructions set by the Pastry Chef.
• Uphold high standards of cleanliness and sanitation throughout the shift.
• Handle lido prep, floating, and breakfast duties as required.
• Work at any pastry station based on operational needs.
• Comply with company recipes, SOPs, training requirements, and property maintenance standards.
• Perform additional job‑related functions as assigned, including health, safety, and security tasks.

Required profile

• Minimum 1 year experience in a 5‑star hotel, cruise ship, or high‑profile restaurant.
• Experience in high‑volume operations serving at least 100 meals per service.
• National Certificate in Pastry and an accredited advanced food safety certification.
• Ability to read, write, and speak English fluently.
• Preferred culinary degree and a Marlin’s Test score of 60 or higher.

Required skills

• Knowledge of VSP (Vegetable Service Procedure) – preferred.
• Operation of kitchen machinery and knife safety.
