Restaurant Commercial Manager

About the role

Kayu Cafe, a well-known cafe on Gili Trawangan with an artisan bakery and specialty coffee, is looking for a Restaurant Commercial Manager. The role focuses on the commercial side of the business: analysing data, improving profitability and shaping the restaurant's commercial direction, rather than running day-to-day operations. It is open to full-time or part-time arrangements, and candidates must already be based in Bali or Gili Trawangan.

Key responsibilities

• Own the restaurant's Profit & Loss (P&L) and report directly to the restaurant owner
• Develop and execute strategies to improve profitability, identify new revenue opportunities and monitor trends
• Monitor revenue, gross profit, labor cost, food cost, operating expenses and margins, and help set budgets, forecasts and financial targets
• Analyse sales trends, customer behaviour and menu performance, prepare regular business reports and present data-backed recommendations
• Work with the Operations Manager and Guest Experience Manager to align commercial initiatives with practical operations and guest experience
• Identify inefficiencies and unnecessary costs, and stay informed on industry trends, pricing and competitors

Required profile

• At least 3 years of experience in the restaurant or hospitality industry
• Strong commercial mindset and proven ability to turn data into profitable decisions
• Comfortable reading and interpreting financial reports, KPIs and business data
• Good understanding of restaurant profitability (revenue, food cost, labor cost, margins)
• Willingness to relocate to Bali or Gili Trawangan
• Preferred: experience in revenue management, business development, finance, consulting or commercial strategy in hospitality, and experience driving P&L in independent restaurants or boutique cafés
