2nd Commis Cook – HAL (SBI)

About the role

The 2nd Commis Cook prepares and handles food for guests and crew following the company’s menus and recipes. The role also supports waste reduction and environmental compliance in the galley.

Key responsibilities

• Comply with company policy on waste separation and environmental compliance.
• Prepare food with minimal waste while ensuring quality, quantity, and attractiveness.
• Implement food handling and cleaning procedures in line with USPH and HACCP standards.
• Maintain and return equipment and utensils properly to avoid damage.
• Report any malfunctioning equipment to the Chef de Partie.
• Ensure guest satisfaction scores for food ratings are met.

Required profile

• 2+ years experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience handling high‑volume service of at least 100 meals per service.
• Certification from an accredited advanced food safety program (DEFU – November 2020).
• Ability to read, write and speak English.
• Preferred: degree from an accredited culinary college or university.
