Chief Baker – Onboard (SBN)

About the role

The Chief Baker leads the galley bakery team on board, ensuring high‑quality baked goods for guests and crew. You will oversee production, training, and compliance with food safety and environmental standards.

Key responsibilities

• Direct and supervise all bakery product preparation according to company standards.
• Develop daily work schedules and conduct monthly performance evaluations for bakery staff.
• Monitor labor hours, food cost, and inventory control.
• Implement USPH and HACCP food handling, cleaning, and storage procedures.
• Ensure waste separation and environmental compliance per Global HESS policies.
• Collaborate with the Executive Chef to achieve high guest satisfaction scores.
• Maintain cleanliness of the bake‑shop and report equipment issues.
• Provide regular training on food safety, waste separation, and kitchen machinery safety.

Required profile

• 5+ years experience in a 5‑star hotel, cruise ship, or high‑profile restaurant bakery.
• 3+ years supervisory experience in a multicultural environment.
• Proven ability to manage high‑volume production (≥500 meals per service).
• Advanced food safety certification and knowledge of HACCP procedures.
• Strong leadership, communication, and team‑building skills.
