Assistant Butcher (HAL) – SBI

About the role

The Assistant Butcher supports the Chief Butcher in preparing and handling all meat products for passengers and crew on board. You will work with established menus and recipes, ensuring high quality and minimal waste.

Key responsibilities

• Prepare butcher department products according to company menus and recipes.
• Comply with waste‑separation and environmental policies, creating minimal food waste.
• Maintain Guest Satisfaction Scores for meat portions, quality, and overall butchery.
• Check quality and quantity of items received, store them per USPH procedures, and use them correctly.
• Follow proper food handling, cleaning, and USPH standards.
• Use all equipment and utensils correctly to avoid damage.
• Report any malfunctioning equipment to the Chief Butcher.
• Follow guidelines and instructions from the Chief Butcher and perform other assigned duties.

Required profile

• Good listening skills and ability to follow instructions.
• Initiative in culinary tasks and willingness to ask questions when unclear.
• Team‑player attitude.
• 2+ years experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience in high‑volume operations (minimum 100 meals per service).
• Certification from an accredited advanced food‑safety program.
• Ability to read, write and speak English fluently.

Required skills

• Food safety certification.
• Knowledge of VSP (preferred).
• Kitchen machinery operation.
• Knife safety techniques.
• Proficiency in English.
