2nd Commis (TAM) – Galley Crew for HAL – SBI

About the role

The HAL vessel is seeking a 2nd Commis (TAM) to work in the galley on the SBI route in Indonesia. You will prepare and handle food for guests and crew, following company menus, recipes and strict safety standards.

Key responsibilities

• Prepare and serve food according to menus while ensuring quality, quantity and presentation.
• Follow waste‑separation policies and minimise food waste.
• Implement USPH and HACCP food handling and cleaning procedures.
• Maintain and return equipment and utensils, reporting any faults.
• Adhere to company dress code, personal conduct and performance standards.
• Achieve guest satisfaction scores for food ratings.
• Support the Chef de Partie/Chef de Cuisine with assigned tasks.
• Maintain high productivity, cleanliness and sanitation throughout the shift.

Required profile

• Minimum 2 years experience in a 5‑star hotel, cruise ship or high‑profile restaurant.
• Experience handling at least 100 meals per service in a high‑volume environment.
• Certification from an accredited advanced food‑safety program.
• Ability to read, write and speak English fluently.
• Preferred culinary degree from an accredited college or university.

Required skills

• Advanced food safety and HACCP knowledge.
• VSP (Vegetable Service Procedure) knowledge (preferred).
• Proficiency with kitchen machinery and knife safety.
