Chef de Cuisine – Paulaner

About the role

We are looking for a Chef de Cuisine to lead the Paulaner kitchen at our Kempinski property in Jakarta. The successful candidate will prepare and serve a range of à la carte dishes that meet guest expectations while overseeing the Kitchen Brigade.

Key responsibilities

• Prepare and serve a variety of à la carte items that satisfy guest expectations.
• Supervise junior members of the Kitchen Brigade.
• Assist in organizing special events and food promotions.
• Contribute to concept ideas and menu development for events and functions.
• Ensure preparation and presentation of all food items follow hotel standards and menu guidelines.
• Maintain comprehensive product knowledge, including ingredients, equipment, suppliers, markets, and trends.
• Uphold a hygienic kitchen environment and personal hygiene standards.
• Support the creation and implementation of departmental standards and procedures.
• Work with management on department budgeting and cost control.
• Monitor departmental costs to ensure performance against budget.
• Adhere to occupational health and safety legislation, policies, and procedures, including HACCP implementation.

Required profile

• Proven experience supervising kitchen staff and junior chefs.
• Strong knowledge of food products, ingredients, and current culinary trends.
• Commitment to maintaining high standards of hygiene and food safety.
• Ability to work with management on budgeting and cost‑control initiatives.
• Awareness of health and safety regulations and the ability to act on hazardous situations.
